i hope if he is serving anyone but himself..that he used mouthwash...and washed his hands
knowing what goes on in kitchens is why i eat mostly at home and no way if the guy working in the kitchen is a teenager
just call me overly picky

Could you imagine peering into a kitchen of a fancy restaurant and seeing the chef doing this!
Outa there!
I was in a restarant one time and before we ordered, I went to the little boys' room. The cook was in there doing his business. He came out and never washed his hands!!!
I came out and told my wife ..WE ARE NOT EATING HERE!
She was in full agreement.

rainbow heart:
Hey NB
you've been listening to Biggs too much... and yep that kid is gonna get you in trouble..
and i have heard that and more all my life..but i'm more picky on the prep than the item.. ah hell..that's not completely true..there are some things i just won't eat
my wonderful old f-i-l who never drove a car and was a a marvelous old farmer pollock used to say things like this you had to eat everything even the squeal on the pig and fried farts and buttermilk
anyway back to the hard cooked eggs
it took me years to where i could do it without half the egg going missing
into a good pot where the eggs just fit so the eggs don't roll around and crack cover with cold water at least one inch over the top of them..no more than two inches bring to a rolling boil and then immediately plunge them into ice cubes and cold water give em a minute to stop cooking you may have to rinse with more cold cause the ice cubes will melt
then if you can pitch the bottom and top off..pretty much like he did just roll them between your hands and the shells come right off or after tapping them on the counter you can peel them the shell ususally comes off in one or two pieces
no need to spit them out of their shells

We peel hard boiled eggs for salads and stuff, no putting the darn egg in one's mouth.
I remember decades ago going to a family function at a Chinese restaurant and finding a cigarette butt in the fried rice...........
I am thinking they scrapped off somebody's finished fried rice on to my bloody plate.........
This is when you could still smoke in restaurants of course.

This same guy has a video from a couple years ago saying to put vinegar in the water you boil eggs to ease the peeling process. The only difference is he doesn't blow the egg out of his hand.

ha i have to say i did try the egg blowing last night....... but it did nt work......
however i did not try it strait away....i boiled the egg the way the guy suggests.....and after i iced it down...... then i putt it in the fridge for a few hours before i was ready to use it.......
so maybe you need to blow it out while its still wet ???
will try again in a few days.......if it doesn t work im going to sky s method.......

Zuni
you can't hard cook em and then sit them in the frig before peeling..ya gotta peel asap
i tried the vinegar in the water and it didn't do anything the real trick is from hot to cold and then peel

Maybe that's why it worked for me sky, I always cool them down as soon as I take them off the stove.
