| Green Tomato Salsa
6 small to medium green tomatoes 1 jalapeno pepper 1 1/2 T extra virgin olive oil 2 T Fresh lime juice 1 teaspoon kosher salt fresh ground black pepper to taste 1/2 cup sweet onion
You can finely chop these ingredients but I prefer to pulse them in a food processor or blender and place them in a sterilized canning jar. Lasts upto 4 weeks in the fridge. No need to pressurize the lid on the canning jar.
It's a crunchy version of salsa and stays crunchy for about two weeks.

| Zucchini Spice Cake
1/2 c. butter 1/2 c. vegtable oil 1 1/2 c. sugar (I use raw) 2 eggs 1 teasp. vanilla 2 1/2 c. flour 1/4 c. unsweetened cocoa 1/8 teasp. of allspice 1/4 teasp. of nutmeg 1 teasp. cinnamon 1 teasp. baking soda 1/2 teasp. salt 1/2 c. buttermilk 2 cups of hand grated zucchini (skin on, cleaned well to remove sand) 6 oz. chocolate chips (dark choc works well) 1.2 c, walnuts chopped
Preheat oven to 325F. Grease and lightly flour 13x9 inch baking pan (I line the bottom with parchment paper).
Beat butter, oil and sugar in large bowl till light and fluffy. Add eggs, one at a time, beating well after each addition. Blend dry ingredients in a separate bowl. Add 1/3 of dry ingredients to wet ingredients and beat well until all are incorporated. Stir in zuchinni, chocolate chips and walnuts (you and add coconut if you like too).
Bake 55 minutes or until wooden toothpick comes out of center of pan clean. Cool.
No need for frosting or powdered sugar. It's a nice moist cake.
Great way to use up those oversized zuchinni from your garden the larger ones work great. | |

| L have you ever tried the one where you use bay seasoning and the zucs are supposed to taste like crab cakes???? i am not a big zuc fan..but my mother is and can use as many as you can grow..he he he so this year i planted two plants for her..now she's trying to give them to me... i have a copy of that recipe if you'd like it. the spice cake one..is for sure getting copied for mom...she'll luv it | |

| No I've never heard of it sky. I'm not a big zucchini fan either... , but my mom is too. I only like the cake with it and sometimes ratatoulle. But I do like summer squash. | |

| Cool beans but you can substitute sour milk for buttermilk. Just put in one tablespoon of apple cider vinegar in a glass of milk and let it stand for about a minute or two. Buttermilk is the better choice of course but I never run out to the store anymore for a missing ingredient, I substitute... Just make sure you're using whole milk. | |
